The decaffeination plant for this coffee is located in the city of Manizales. They use a sugar cane decaffeination process to strip the coffee of its caffeine content. This process utilises naturally derived ethyl acetate (a byproduct from refining sugar cane), diluted with local spring water. Ethyl acetate attaches itself to substances of a particular molecular weight (including caffeine), to decaffeinate the coffee without hindering its natural complexities and flavour compounds.
